Kebabs and Skate
I've been working like a slave's dog lately and haven't had time to post some recipes. Hopefully things will get back to normal next week.
Last week we cooked beef and vegetable kebabs...
...and skate with capers. If you've never had skate, try it. It's fantastic. It tastes a little like scallops, only a bit sweeter.

Matthew's Rules of Cooking
1. Never pick anything up unless you know where you're going to put it down.
2. Brown food tastes better.
3. Water is for washing.
4. Brine your poultry, brine your pork.
5. If the eggs look done in the pan, they're overcooked.
6. Parmesan cheese doesn't come in a green can.
